Don’t be intimidated by the idea of gourmet appetizers -we promise they’re simple enough for any bachelorette to make, especially if they have the help of one or two bridesmaids. Bachelorette Party Appetizers

Chipotle Shrimp Cups - Makes 36 servings
36 Wonton Cups
6 ounces of shredded, low-fat sharp cheddar cheese
1 cup cooked, chopped shrimp
1 cup chopped and bottled roasted red bell peppers
1 cup of bottled chipotle salsa
1/2 cup of chopped green onions
Preheat your oven to 350 degrees. Spray cooking spray onto 36 mini muffin cups, and press one wonton wrapper into each cup. Bake the wonton wrapper at 350 degrees for 7 minutes, and be sure to keep them in their muffin cups.
Combine the remaining ingredients, and spoon into each wonton cup. Bake the now filled wonton cup at 350 degrees for 6 minutes. Serve immediately, and enjoy at your bachelorette party!
Mini Bacon and Potato Frittatas - Makes 18 servings
5 uncooked bacon slices
2 cups finely chopped potatoes
1/2 cup sweet onion, chopped
1 tsp salt, divided
1/4 tsp dried thyme
1/2 cup chopped, fresh chives, divided
2 tablespoons of grated Paremesan cheese
1/4 tsp ground black pepper
7 large egg whites, lightly beaten
3 large eggs, lightly beaten
6 tablespoons of fat-free sour cream
36 muffin cups
Preheat oven to 350 degrees. Place potato in a medium saucepan and cover with water. Bring the water to a boil and cook for four minutes until it’s nearly tender. Drain the water.
Cook the bacon in a large nonstick skillet over medium heat until the bacon is crisp. Remove the bacon from the pan, keeping two teaspoons of drippings in the pan. Crumble the bacon and set it aside. Add the potato, onion, 1/4 tsp salt, and thyme to the leftover drippings in the pan. Cook the pan for 8 minutes or until the potato is lightly brown on medium-high heat. Remove from heat and allow to cool.
Combine the potato mixture, bacon, remaining 3/4 teaspoon salt, 2 tablespoons chives, cheese, pepper, egg whites, and eggs, stirring well with a whisk. Spray 36 muffin cups with cooking spray, and spoon 1 tablespoon of egg mixture into each muffin cup, and bake at 375 degrees for 16 minutes. Cool for 5 minutes on a wire rack. Take the frittatas out of the muffin cups, and top each with 1/2 teaspoon of sour cream and 1/2 teaspoon of chives.
